Mi querido Blog. Tanto tiempo sin
escribirnos. Tantas fotografías guardadas en carpetas esperando por salir a la
luz. Pero ya estoy aquí, de vuelta una vez más! Estos meses no han estado
faltos de cocina y evento, pero lamentablemente no he tenido ni el tiempo ni la
inspiración suficiente como para traducirlo en palabras. En fin, gracias a Dios el bloqueo de escritor terminó
y puedo seguir con esto que, honestamente me apasiona!
Quiero partir contando una de las
experiencias, diferentes si se puede decir, que me tocó vivir dentro de estos
meses. Me imagino que muchos saben lo necesario que es el apoyo social para
cualquier tipo de emprendimiento, desde una empresa con un producto único a un
blog como este. Bueno, como parte de “ese mundo”, siempre estoy encantada de
correr la voz sobre nuevas páginas o pequeñas empresas emergentes. Por lo mismo
estoy feliz de contar que trabajé en una especie de colaboración con una amiga
que se está iniciando en el mundo de la moda. Tu Look con Carola (http://tulookconcarola.hol.es) es el nombre
del nuevo concepto creado por Carolina Vega. Una página que reúne todo lo que
le inspira y que pretende traducir principalmente en maquillaje profesional y
diseño de vestuario. Como buena idea que recién está partiendo, es necesario
armar material para poder presentarlo al mundo. Una serie de sesiones
fotográficas ha sido el principal kick off para darle vida a este proyecto. Ahí
es donde entro yo y Cooking con Cuento. Nos organizamos para trabajar en una
sesión de fotos donde por supuesto, después de largas horas frente a la cámara,
se necesitaran alimentos para recobrar fuerzas y seguir con el trabajo que debo
decir no es nada menor. Muffins de zanahoria, wraps de jamón serrano y agua
limón menta fueron el menú elegido para esa tarde. Algo relajado, fácil de
preparar y que de seguro iba a gustar a varios. Creo que las fotografías hablan
por sí solas! Espero que Tu Look con Carola siga firme y en pie tratando de
encontrar su lugar en el mundo. Animo

I want to begin talking about one of the experiences, different if you would say, that I lived within these past months. I imagine that many of you know how necessary social support is for any type of project, whether it´s a company with a single product, or a blog like this. Well, as part of "this
world," I'm always happy to spread the word about new pages or small emerging companies. For this, I am happy to
share that I worked in a partnership
with a friend who is starting in fashion. “Tu Look
con Carola” (http://tulookconcarola.hol.es) is
the name of the new concept created
by Carolina Vega. A page that brings together all that inspires her and that it seeks to show its product mainly in the form of professional makeup and fashion design. As any
good idea that’s just starting, she needs to put together lots of visual material for a fair presentation to the world. A series of photo shoots have been the main kick off to give life to
this project. That's where I and “Cooking
con Cuento” came in. We organized a photo shoot together, where of course, after long hours
in front of the camera, people were in need of some fuel to continue their excellent work. Carrot muffins, prosciutto wraps and lemon mint water
were the chosen menu
for the evening. Something relaxed,
easy to prepare and sure to be favorites among everyone. I think pictures speak for themselves! Hope “Tu Look con Carola” stand
firm and continue trying to find its place in the world. Go Caro!
Muffins de Zanahoria
Ingredientes
- 1/ taza de nueces tostadas y picadas
- 1 1/3 de taza de zanahoria rallada (de 2 a 3 zanahorias medianas)
- 1 manzana pequeña pelada y rallada
- 1 1/3 de harina (sin polvos de hornear)
- ¾ de taza de azúcar (puede reemplazarse por ½ taza de azúcar light)
- ½ cdta de bicarbonato
- 1 cdta de polvos de hornear
- ¼ cdta de sal
- 1 cdta de canela molida
- ½ taza de coco rallado
- 2 huevos grandes
- ½ taza de aceite de canola o maravilla
- ½ cdta de esencia de vainilla
Preparación
- Precalentar horno a 180 °C. Engrasar moldes de muffin o llenar con papeles individuales.
- Tostar las nueces (más menos 5 min hasta que estén doradas). Dejar reposar y picar.
- Pelar y rallar las zanahorias y la manzana. Reservar.
- En un bowl mezclar la harina, el azúcar, el bicarbonato, los polvos de hornar, la sal y la canela. Agregar las nueces picadas y el coco.
- En otro bowl batir los huevos, el aceite y la vainilla. Agregar a esto la zanahoria y la manzana hasta que todo esté húmedo. Agregar esto a los ingredientes secos. Una vez que esté la mezcla homogénea, dividir en los moldes y hornear de 20 a 25 min hasta que el centro esté seco al enterrar la punta de un cuchillo.
- Sacar del horno y dejar reposar 10 minutos.
Frosting (opcional)
- ¼ de taza de mantequilla sin sal
- ½ taza de queso crema a temperatura ambiente
- 3 cdas de azúcar flor
- ½ cdta de esencia de vainilla
Preparación
- Mezclar hasta tener una pasta homogénea el queso y la mantequilla.
- Agregar de a poco el azúcar hasta que esté todo incorporado y suave. Verter esencia de vainilla y mezclar.
- Poner una cucharada sobre cada muffin y esparcir.
Carrot Muffins
Ingredients
- 1/4 cup walnuts toasted and coarsely chopped
- 1 1/3 cups grated raw carrot (about 2-3 peeled carrots)
- 1 small apple, peeled and grated
- 1 1/3 cups flour
- 3/4 cup granulated white sugar
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup coconut
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla extract
Preparation
- Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven. Place paper liners in 12 muffin cups.
- Toast the walnuts for about 5 minutes or until lightly browned and fragrant. Let cool and then chop coarsely.
- Peel and finely grate the carrots and apple. Set aside.
- In a large bowl whisk together the flour, sugar, baking soda, baking powder, salt, and ground cinnamon. Stir in the nuts and coconut.
- In a separate bowl whisk together the eggs, oil, and vanilla extract. Fold the wet ingredients, along with the grated carrot and apple, into the flour mixture, stirring just until moistened. Evenly divide the batter between the prepared muffin cups and bake for 20 - 25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool on a wire rack. After about 10 minutes remove the muffins from the pans and cool completely on a wire rack before frosting.
- Makes 12 muffins.
Frosting (optional)
- 1/4 cup (56 grams) unsalted butter, room temperature
- 4 ounces (1/2 cup) (110 grams) cream cheese, room temperature
- 3 tablespoons confectioners' (powdered or icing) sugar
- 1/2 teaspoon pure vanilla extract
Preparation
- Beat the butter and cream cheese until very smooth with no lumps. Gradually beat in the powdered sugar until fully incorporated and smooth. Beat in the vanilla extract.
- Place a dollop of the cream cheese frosting on the top of each muffin.
